Took these today.
The smoker. I love it.

Rainbow trout. Cured overnight in salt, maple syrup and garlic. Someone else caught it. Probably the farmer.

Charcoal fire and maple wood chips and 1 1/2 hours later.

Smoked trout is my favorite smoked fish. Hell, trout is my favorite fresh water fish.

Maple syrup vodka martinis ?

the fish looks delish and that maple syrup would fetch a very hefty price at my local grocery store. beautiful baby, too!

You know it does.

We smoked Arctic Char last week. I cured it for longer and with more salt. It was something else. I like oily fish.

Now you see that is how it's done up here in the North country.

You two are across a little land and a medium sized lake called Huron from me, but I call Ontario my neighbor and we really share the same air water cold fronts and snow storms more or less - and Smoked salmon is a tad more popular around here, but Rainbows, Brookies, Splake, Lakers and Browns are all in the water around here and are ready to be cooked up proper - smoked, fried, bon-fired or buried in the coals, it's all good.

I can get all of those and real maple syrup (and sugar) locally here, and those foods + wild leeks/ramps and morels and wild rice and wild ginger and a bunch others (ruffed grouse - yum) are treats of the North woods, which is why its worth living up here.

I had morels for breakfast beside my eggs and sweet potatoes this morning.

If it wasn't for those treats, mosquitoes, deer flies, noseeums and black flies + heavy snow would make it much more of a challenge to live in this refrigerator.
